Specialty coffee isn't a marketing term. It's a standard.
The Specialty Coffee Association defines it as coffee that scores 80 points or higher on a 100-point scale, evaluated by trained professionals. It has to be traceable, grown with care, and processed with precision.
Not every coffee makes the cut. Most of what's sold globally doesn't even come close.
Here's what sets it apart:
Grown in specific conditions
Specialty coffee comes from regions where climate, altitude, and soil create better flavor. Often grown at higher elevations where conditions are harder to maintain but produce more complex beans.
Hand-picked at peak ripeness
Farmers select only the ripe cherries, one at a time. It's slower and more labor-intensive than machine harvesting, but it protects quality from the start.
Processed with precision
Whether washed, natural, or experimental, processing is controlled and deliberate. The method shapes the flavor, and small decisions here make a big difference in the cup.
Graded and scored
Specialty coffee goes through strict evaluation. Beans are sorted, defects are removed, and only the top grades qualify. Most coffee gets rejected before it earns the specialty label.
Traceable and transparent
You can trace specialty coffee back to the farm, region, or cooperative that grew it. There's accountability in the supply chain and a focus on fair pay and long-term relationships with farmers.
Why it costs more:
All of this takes more time, more labor, and more care. When you combine selective growing conditions, hand-picking, precise processing, strict grading, and fair compensation, you end up with smaller quantities of better coffee.
The price reflects the work. Not hype. Not branding. Just the cost of doing things right.
